Are you looking for a fresh and indulgent dessert for the warm days? This peach sorbet dome on a crunchy pistachio base will delight your taste buds. It consists of peach sorbet placed on a pistachio crunch. It's melting and crunchy... Hummmm ^^. By combining the fruity sweetness of the sorbet with the crunch of this base, you achieve a harmonious contrast of flavors and textures. It's easy to make, but you'll need to set aside some time in advance to prepare the sorbet.
The day before, make sorbet (or soften store-bought sorbet), pour it into half-sphere molds, and place it in the freezer overnight.
Crush the delicate crepes to make crumbs.
Place the chopped white chocolate and pistachio paste in a container. Melt in the microwave for 30 seconds, then stir to combine well.
Incorporate the pistachio powder and cookie crumbs. Spread this mixture between 2 sheets of parchment paper using a rolling pin to a thickness of 5 mm, then refrigerate to allow it to harden.
To finish, take out of the fridge and cut out circles using a round cutter, then place a half-circle of sorbet on top. Serve immediately.
