Peel and cut the peaches into pieces. Place them in a saucepan with a little water. Add the sugar. Cook over low heat, covered, for 35 minutes.
To finish, stir regularly. Add a little water if needed. The peaches should not stick. You can add a bit of sugar, but the peaches are already very sweet. At the end of cooking, pour the compote into ramekins and serve it warm.
