A delicious velouté, it is important to take advantage of the pea season, which doesn't last very long. There is nothing like a little velouté to warm up, a recipe I wanted to make for a while, and with the temperature having cooled down, we really enjoyed it. The smoked bacon adds a little indulgent touch that gives it a very pleasant flavor.
Shell the peas. Sauté the chopped onion in olive oil. Add the peas and mix.
Cover with vegetable broth. Cook for about 25 minutes. In the meantime, sauté the bacon in a dry pan. Once cooked, add the cream.
Transfer everything to a blender. Check the seasoning. Serve hot in bowls. Add the bacon. Sprinkle with gomasio and enjoy.
