The parsnip is an ancient vegetable, slightly sweet, and can be cooked in various ways to enjoy all its benefits. This soup is very simple to prepare and delicious. The combination of parsnip and apple adds a touch of originality and indulgence.
Peel the parsnips, wash them, and cut them into slices. Peel the apple, core it, and cut it into cubes. Peel the onion and slice it finely.
In a saucepan, heat the olive oil. Add onion, sliced parsnips, and apple cubes, along with salt and chili. Allow to cook until slightly golden. Add the broth and let simmer for about 20 minutes until everything is cooked.
Drain, reserving the vegetable broth. Blend the parsnip and apple, gradually adding the broth to achieve the desired consistency. Add the milk, and adjust the seasoning with salt and chili. Add pepper.
