 400 Scallops without roe
 16 thin slices of chorizo
 20 butter
 1 four spices
 100 Grated Swiss cheese

Preheat the oven to 180-200°C. Spread a thin layer of grated Swiss cheese on a sheet of baking parchment. Season with pepper.

Bake for 5 to 7 minutes while watching for color. Let cool and peel off the paper. Set aside.

In a hot frying pan, brown the slices of chorizo without drying them out too much, absorb the excess fat from the slices, and place the slices on the plates.

In the same pan, add the butter, then the scallops lightly seasoned with salt, pepper, and four spices. Sear on each side for 1 minute over medium heat.
