It's beautiful weather, it's hot (a bit too much for my taste), and soon it will be vacation time for afternoon tea. So, I'm starting to gather my supplies for our upcoming trip to the mountains. Since we love homemade little cookies for snack time, I've made orange blossom cookies. They're simply delicious. All the essence of the region is captured in these little cookies. Dipped in a good chai tea, it's pure happiness.
For about 20 pieces. Beat the sugar with the eggs in a mixing bowl until the mixture lightens in color. Add the orange blossom water, flour, and olive oil. Mix vigorously until you obtain a smooth dough.
Shape the dough into logs. My logs weigh approximately 43 grams. Grease a baking sheet and place them on it. Let them rest for 2 hours at room temperature.
To finish, preheat your oven to 180°C (moderate heat). Brush the biscuits with egg yolk and bake them for 15 minutes, keeping an eye on the end of the cooking time. Take them out of the oven as soon as they begin to brown slightly.
