Have the ink and eyes removed from the octopuses by your fishmonger. Then, place them in a pot of boiling water and let them cook for 1 hour. After this time, drain them.

Rinse them under cold water, removing impurities and the pink skin, except for the skin that clings to the octopuses. Cut them into pieces with scissors and place them in a bowl or a large plate.
