Cook the mixed grains according to the instructions on the package, for 20 to 25 minutes.
Using a mandoline, slice the carrots and zucchini into thin slices. Thinly slice the onion, crush the garlic, and roughly chop the spinach.
Heat the olive oil and sauté the sliced onion with the garlic, adding the spinach at the end of cooking.
Beat the eggs with the plant-based drink, salt, and pepper. Add the drained cereals, sautéed onions, and grated cheese. Mix well. Pour into round silicone molds.
Shape the roses with the zucchini and carrots and place them on the preparation. Be careful to press them down a bit so that the two parts do not separate after cooking.
Using a brush, coat the vegetables with a little olive oil. Bake for 30 minutes at 180°C.
