For this recipe, we use melon, cucumber, and cured ham, three ingredients that you are surely used to pairing but can sometimes lack originality. To twist this classic summer dish, we suggest adding a touch of acidity and uniqueness with a lemon vinaigrette and a novel presentation. A recipe proposed and photographed by us.
Peel the melon using a sharp knife, then cut into fingers of melon flesh. Set aside. Slice the cucumber into thin slices using a mandoline set to 2mm thickness (or if unavailable, use a vegetable peeler).
Roll the slices lengthwise to form tubes. Prepare the dressing by mixing the oil, vinegar, lemon juice, and mustard.
To finish, place the melon slice in the center of a flat plate, then arrange the cucumber rolls around it. Alternate with slices of prosciutto. Add drops of vinaigrette.
