Harira, a thick and bright red soup, traditionally served during Ramadan, is enjoyable to savor with family or friends throughout the winter!
The day before, soak the chickpeas in water.
On the same day, finely chop the onion, cilantro, and celery.
In a pot, cook the onion with olive oil.
Add the celery, chickpeas, crushed tomatoes, spices, salt, and pepper. Add 1 liter of water and let simmer for about 1 hour.
To finish, serve hot sprinkled with chopped coriander.
