Whip the egg whites with an electric mixer together with 4 tablespoons of sugar. In another bowl, whip the mascarpone with the white cheese and the remaining sugar. Gently fold in the egg whites using a spatula. Taste and add more sugar if necessary.
Preparation of the glasses: Place a tablespoon of date puree and pieces of dates at the bottom of each glass. Cover with the mascarpone mixture. Let chill in the refrigerator for about 2 hours.
