Ingredients
 2 Organic salmon fillets
 2 Flower of salt
 1 Brown sugar
 100 Spelt
 1 Zucchini
 1 Yellow bell pepper
 4 Cherry tomatoes
 1 Onion
 Lemon juice
 10 Olive oil
 Oregano
 Salt
 Pepper

Thaw and thoroughly dry the salmon fillets. Mix 2 tablespoons of salt with 1 tablespoon of brown sugar, then add pepper (about 2 turns of a grinder). Cover the salmon fillets with this mixture and let marinate in the refrigerator for 4 hours.

Chop the onion, zucchini, and bell pepper, then cook them for 5 to 6 minutes in a pan with a bit of olive oil. Chop the tomatoes and add them to the spelt-vegetable mixture. Season with lemon juice, olive oil, salt, and pepper.

Finally, rinse and pat dry the salmon fillets, then pan-sear them in olive oil for 1 to 2 minutes on each side.

Cook the spelt in a large pot of salted water for about 15 minutes. Once the spelt is cooked, drain it and let it cool. You can of course replace the spelt with rice or pasta.

To finish, serve everything in a deep plate with a little fresh oregano.
