 4 Egg
 150 Fine sugar
 120 Butter
 110 Flour
 50 Whole milk
 1 pinch Fine salt
 100 Dark chocolate
 100 Milk chocolate
6 Pears in syrup (made at home)
Directions
1

Drain the pears in syrup (homemade or store-bought). Break the chocolate into pieces and place them in a saucepan with the milk. Melt the chocolate in the milk while stirring regularly. Do not bring to a boil. Melt the butter.

2

Preheat the oven to 150 degrees. Line a 24 cm diameter cake pan with parchment paper. Cut the pears into slices or pieces and then arrange them at the bottom of the pan.

3

Separate the egg whites from the yolks. Whisk the egg yolks with the sugar until the mixture lightens. Add the melted butter, the flour, and then the chocolate milk while mixing.

4

Beat the egg whites until very stiff with a pinch of salt. Gently fold them into the previous mixture. The mixture is very liquid, which is normal; take your time to carefully incorporate the beaten egg whites without breaking them.

5

Pour the mixture over the pears. Bake for 50 minutes. When taking it out of the oven, the cake will shake slightly; this is normal.

6

Let the cake cool completely before removing it from the mold. A stay in the refrigerator will help the cake hold its shape.

7

Sprinkle the magic cake with powdered sugar. Enjoy it cold. This one is truly irresistible! Happy tasting!

8

Finally, the pears will find themselves in the middle of the cake in the cream as if by magic, this happens during baking!

Make sure to prepare the cake in advance so it sets well! The fridge seems essential. I would also add 5 minutes of baking time to ensure it holds together. Other than that, really delicious!!! 5/5

Really delicious... BUT the pieces of pear stayed at the bottom of the cake!? I admit I don't understand why; if you have any idea, please let me know because I want to get it right!!!

Hello Chris, yes a cake pan of a different size can be suitable. Be careful with the cooking time. Thank you for your interest in my recipe.

Really very good. I want to try replacing the pears with raspberries for a change, but I'm afraid they will turn to mush during cooking.

A marvel!! Thank you for the delicious desserts. The combination of chocolate and pears is always a success, but here the texture is new, surprising, and very pleasant to the eye and the palate. Having prepared this dessert somewhat hastily, I forgot to add the whipped egg whites... an oversight that surely changed the "magical" quality of the different layers. A good excuse to make it again very soon.
