Whisk the eggs with the milk, vanilla bean seeds, and sugar.
Cut 6 slices of bread. Dip them in the previous mixture to soak them well.
Cut the apricots in half. Sauté them for a few minutes in a pan with 30g of butter and a few sprigs of rosemary. Set aside.
Heat another pan with the remaining butter.
Place the slices of bread and let them brown for a few minutes. Sprinkle with sugar.
Serve the brioche with roasted fresh fruits, sprinkle with the remaining sugar, and enjoy immediately!
