 400 Chocolate
 10 Egg white
 1 pinch Fine salt
 20 Powdered sugar

Prepare the egg whites with the salt. Melt the chocolate in a double boiler with 1 tablespoon of water and stir until smooth. Remove from the heat and continue to stir with a wooden spoon.

At the same time, start whipping the egg whites on low speed. When they become pale, switch to high speed. Once they are firm, add the sugar. When the marks from the whisk remain in the mixture, they are ready.

To finish, take 1/3 of the egg whites and mix them vigorously with the chocolate. This will loosen it. Add the remaining egg whites and fold in gently with a circular motion without breaking them, until the two are well combined.
