Wash and cut the leeks into thin slices and cook in a saucepan with enough water for 15 minutes, drain and set aside.
In a bowl, whisk together olive oil, whole-grain mustard, balsamic vinegar, salt, and pepper.
Incorporate the leeks and mix well.
To finish, place the slices of leeks on a plate, then add the cheese and the cured ham.
