Enjoy this delicious leek and bacon tart, a must-have in any kitchen that will win over the whole family. For the shortcrust pastry
 150 Flour
 100 Butter
 ½ Salt
 ½ Water
For the topping
 3 Leek
 150 Bacon
 20 Butter
 1 Flour
 1 Egg yolk
 80 Grated Emmental cheese

Wash and slice the leeks. Melt the butter in a pan and brown the bacon. Then add the leeks and cook them until they are golden, stirring occasionally. Pour the cream over the mixture, along with the spoonful of flour. When the mixture is boiling, remove the pan from the heat and add the egg yolk. Mix everything well again.

While the leeks are cooking, prepare the shortcrust pastry by mixing the flour, salt, soft butter cut into pieces, and water. You should obtain a soft and slightly elastic dough. Then, roll it out on a floured surface, place it in a tart pan of about 25 cm in diameter, and prick it with a fork. Preheat the oven to 180°C.

To finish, cover the bottom of the crust with the mixture. Sprinkle the tart with grated cheese. Bake it at 180°C for about 40 minutes.
