Lavender shortbread cookies, a well-appreciated discovery. However, one must be very careful with the amount of lavender to add, as these cookies could quickly become inedible due to an overpowering soap or floral water taste. A teaspoon is more than sufficient.
Melt the butter in a saucepan. Then add the lavender flowers and let steep for about 5 minutes. Refrigerate everything for 30 minutes to harden.
Then put all the ingredients into the bowl of your mixer and mix until you obtain a homogeneous dough. Wrap the dough and refrigerate for 1 hour. Preheat the oven to 180°.
Roll out your dough and using a 6 cm cutter, make circles. Place them well spaced on a baking sheet lined with parchment paper or a silicone mat.
Bake for about 10 minutes (depending on your oven). Let cool slightly before removing them.
To finish, store them in a metal box to enjoy with a nice tea.
