For the salad
 600 Cleaned squid
 1 Cucumber
 50 Roasted and salted peanut
 1 Mint
 1 Thai basil
 1 Olive oil
For the sauce
 1 peanut oil
 3 Lime juice
 2 bird's eye chili
 2 soy sauce
 2 cloves Garlic
 2 Olive oil

Prepare the sauce: in a bowl, mix the peanut oil, lime juice, chopped chilies, and soy sauce.

Heat 2 tablespoons of olive oil in a small pan and sauté the peeled and finely minced garlic. Add it to the sauce and set aside.

Wash the cucumber and slice it thinly. Wash and remove the leaves from the basil and mint. Mix everything in a bowl.

Heat 1 tablespoon of olive oil in a skillet over high heat and quickly sear the calamari until they are golden.

To finish, divide the warm pieces of squid onto 6 plates, serve with cucumbers and herbs, sprinkle with crushed peanuts, and drizzle with soy sauce.
