Ingredients
 2 White asparagus
 200 Ossau Iraty
 10 Liquid cream
 1 Rapeseed oil
 Salt
 Freshly ground white pepper
 1 pinch Nutmeg

Peel the asparagus, cut them all to the same length, and place them in a baking dish. Drizzle with oil, season with salt and pepper. Mix well. Place in the oven, turn it on to 180°C, and let cook for 20 minutes.

Cut 12 thin slices of cheese. Cut the remainder of the cheese into small cubes and melt them in a saucepan with cream over very low heat. When the cheese has melted, blend everything, season with salt, pepper, and nutmeg.

To finish, preheat the oven to 220°C. Place a slice of cheese on each asparagus spear and gratin them. Serve the asparagus warm with the cheese cream.
