Peel and wash the mini carrots. Leave 2 cm of the greens. Cut the largest ones in half lengthwise.
Place the mini carrots in a skillet. Add the butter and sugar. Cover with water. Place a sheet of parchment paper on top.
Cooking: 30 minutes on low heat. Remove the parchment paper.
To finish, continue cooking until all the water has evaporated. Check the cooking with the tip of a knife. Serve hot. Sprinkle with chopped parsley.
