Using a cookie cutter, cut your gingerbread into hearts, circles, or stars, according to your inspiration.
Arrange the gingerbread on a plate. Place a slice of duck on each slice of gingerbread. Cut the cheese into thin slices and then use a cookie cutter to shape it.
Finally, place a grape on each bite and secure it with a toothpick.
