Discover this recipe for a fruitcake. Perfect with a little tea, it is simply indulgent and delicious, a must-try for the next snack time.
Preparation of the ingredients: Wash the raisins, cut those that are too large. Soak them in a little water and rum to rehydrate (microwave). Cut the fruit peels.
Preparation of the dough: Work the butter until creamy, add the sugars until creamy ribbons form. Add the eggs one by one, mixing well with a mixer. Add the rum, mix vigorously, then add the flour and the baking powder, followed by the drained raisins, fruits except for the cherries and almonds, 2 pinches of nutmeg, cinnamon, and lemon zest.
Butter and flour, or line the molds with parchment paper. Pour half of the batter into one mold. Arrange whole or sliced almonds on the surface and pour the remaining batter into a second loaf mold.
Cooking Bake in a gentle oven at 150 °C (thermostat 5) for 1 hour for cake molds. Monitor and check the cooking with a knife blade.
