To try: this recipe for fried enoki mushrooms, Ezme sauce.
Mix all the sauce ingredients together. Remove the seeds from the tomato and the red pepper, cut them into small cubes, and then finely chop the onion. Add these three ingredients to the sauce and season with salt.
Just before serving, heat the frying oil. Cut off the stems of the mushrooms, being careful not to break them (they are very fragile). In bowls, put the cornstarch in one, and crack the eggs while whisking in the other.
Once the oil is hot, take the mushrooms, dip them in the eggs and the cornstarch. Immerse them one by one directly into the boiling oil.
Wait for the mushroom to be nicely browned on both sides, then place it on paper towels and sprinkle with salt.
To finish, serve immediately with the sauce.
