The freshness of autumn calls for a warming dish... So here is a very simple vegetarian dish... and very delicious!
Remove the stem from the mushrooms, clean them, and slice them. Peel and finely chop the onions.
In a skillet or large pan, sauté the onions in a tablespoon of olive oil. Add the slices of mushrooms. Sauté them well for about 10 minutes, stirring very often. Meanwhile, cook the fresh gnocchi in boiling water according to the instructions, then drain them.
Add the sautéed mushrooms and onions to the tomato puree. Let simmer for 5 minutes. Finally, add the gnocchi. Season with salt, pepper, and a pinch of paprika. Pour everything into a baking dish and cover with grated cheese. Bake for 10 minutes until golden.
Serve hot, sprinkled or not with basil leaves.
