 4 Individual Focaccia with Pesto & Mozzarella
 200 Chicken breast
 50 Parsley
 10 Gherkin
 30 Capers in vinegar
 1 Soft bread
 2 Lemon
 5 White wine vinegar (or cider vinegar)
 3 dashes Anchovies in oil
 1 clove Garlic
 1 dash Olive oil
 1 pinch Salt
 1 pinch Pepper

Preparation of ingredients: Wash the parsley and blend it with the garlic, pickles, bread, vinegar, capers, and anchovies. Blend until a paste is formed and dilute it with a little olive oil.

Preparation of the focaccias Preheat the oven to 180°C. Place the focaccias on a baking sheet lined with parchment paper and bake for 5 – 6 minutes.

Chicken preparation Meanwhile, prepare the chicken. Cut the breasts into strips or cubes. Then coat them in flour. Heat 2 tablespoons of oil in a pan and brown the chicken. Then pour in the juice of 1 lemon and cook for 1 minute. Season with salt and pepper.

Topping: Garnish each focaccia with the green sauce, chicken, and add a few thin slices of lemon.
