A recipe for energy balls presented and photographed by Eric Bur.
Place the shelled almonds and pistachios in the bowl of a blender. Blend until a fine powder is achieved.
Remove the pits from the dates and chop them coarsely. Place 1/3 of the dates in the blender and blend. Add the second third of the dates with the coconut oil, blend again, and finish with the last third, blending until a paste is obtained.
To finish, shape the dough into balls and roll them in shredded coconut. Place in the refrigerator until serving. These energy balls can be stored for 1 week in an airtight container kept cool.
