 2 Red chicory
 6 Parma ham
 Watercress or spinach
 2 White chicory
 1 Soy sauce
 1 Toasted sesame oil
For the mango salsa
 1 Diced mango
 ¼ Diced cucumber
 1 Diced kiwi
 2 Coriander
 1 Lemon juice
 1 Red or green pepper
 Salt
 Pepper
 1 pinch Sugar

Prepare the salsa by mixing all the ingredients. According to your taste, add a certain amount of chili. Season with salt, black pepper, and a pinch of sugar.

In a bowl, whisk together the soy sauce and sesame oil. Combine this mixture with the torn chicory leaves. Serve on two plates.
