Ingredients
 1 Large sweet potato
 1 Organic eggplant
 Oregano
 1 Blue cheese
 Salt, pepper
 1 Shallot

Wash and peel the sweet potato. Slice the sweet potato and steam it lightly. Cut the eggplant into slices. Preheat the oven to 200°C.

Butter a baking dish. Place the chopped shallots on the bottom. Then, arrange the slices of sweet potato and eggplant harmoniously, alternating them with slices of cheese. Sprinkle with oregano.
