Discover this recipe for a crispy vanilla-flavored cheesecake. This dessert with a delightful vanilla taste is made with filo pastry sheets for even more crunch.
Preparation of the dough: Choose a 20 cm diameter round baking dish. Roll out the filo pastry sheets and cut out circles with a diameter of 30 cm. Using a brush, coat each sheet with butter before filling them and placing them in the dish, like a pie crust. There is no need to butter the dish, as the filo pastry is already buttery.
Preparation of the tart crust: Blend the cookies in a mixer. Melt the butter in a mixing bowl, add the cookie crumbs, and mix to obtain a dough. Spread this dough evenly in the bottom of the mold, on the filo pastry, and place in the refrigerator for 30 minutes.
Preparation of the mixture Preheat the oven to 180°C. Beat the eggs and mix them with the cottage cheese, then add the thick cream, powdered sugar, and a tablespoon of natural vanilla extract.
Cooking Mix well and pour into the mold. Bake in the oven for 45 minutes.
Presentation Remove the cheesecake from the oven, let it cool completely, then place it in the refrigerator for 2 hours. Decorate with slices of kiwi, pieces of strawberry, and flower petals.
