The secret to crispy sweet potato fries!
Wash and peel the sweet potatoes. Dry them well. Cut the sweet potatoes into 5 mm slices and then cut them into long fry shapes. Place the fries in a large bowl. Coat the sweet potato fries with olive oil or another oil of your choice. In a small bowl, mix the flours and baking powder with all the spices.
Preheat the oven for at least 20 minutes at 220°C. The oven must be very hot to make the fries crispy. Pour the mixture of flour and spices over the fries. (Note that white flour is very important in this recipe; if you wish, you can replace the flours and baking powder with Panko, the Japanese breadcrumbs). Mix well with two large spoons. Line the baking tray with parchment paper. Oil the paper with a pastry brush. Spread the fries without piling them up. Just a single layer on the tray.
The fries should not touch each other (another tip for achieving crispiness!) Lower your oven to 200°C. Bake for 20 to 30 minutes depending on your oven, monitoring the cooking process. Flip the fries halfway through cooking. Extend the cooking time if necessary until the fries are nice and crispy. When removing from the oven, let the fries sit on the hot baking sheet before transferring them to a plate. The moisture will continue to evaporate, which is even better for getting crispier fries.
