Cut 2 cloves of garlic in half and place them inside the chicken, along with thyme and rosemary. Season the inside with salt and pepper. Brush with olive oil. Season the skin of the chicken (over the olive oil so it adheres well to the skin).
To finish, place the young chicken cold in the oven (to ensure it is tender) and raise the temperature to 200° for 45 minutes, basting occasionally with cold water to create a sauce at the end of cooking. If the skin browns too quickly, lower the temperature.
