A tradition that my grandmother still prepares for us every Easter.
In a mixing bowl, combine the flour, water, butter, and a pinch of salt. Mix well until the dough is smooth and homogeneous. Let it rest for an hour in the refrigerator. Cook the 3 hard-boiled eggs. Roll out the dough. Fold it 1/3 - 3/4, turn it, and repeat.
Roll out and shape into a rectangle. Mix the filling, parsley, and chopped shallot. Place the filling in the center of the dough (1.5 cm). Cut the eggs in half. Place on the dough.
To finish, fold the dough to seal it. Brush with egg yolk. Bake at 180°C for 40 to 45 minutes depending on your oven.
