Recipe for Colcannon or Irish Mashed Potatoes

Colcannon is an Irish culinary specialty, vegetarian and economical. It consists of a thick mash made from potatoes, cabbage, butter, milk, and onions.

Ingredients
 1 Potato
 1 green cabbage
 6 Green onion
 3 Fresh cream
 50 Butter
 50 Milk
 ½ Flat-leaf parsley
 Salt
 Pepper
Directions

Peel and wash the potatoes. Cook them in salted boiling water until they are tender inside (about 30 minutes). Drain them, then mash them in a pot with milk.

Wash the parsley, dry it, and then chop it finely. Set aside. Wash the onions, slice them, and sauté them in a pan. In the meantime, wash the cabbage, then slice it finely and add it to the onions. Season with salt and pepper. Cook everything for about 15 to 20 minutes, stirring often.

To finish Once the cooking is complete, add the onions and cabbage to the puree. Mix the preparation with the butter, cream, and parsley. Serve alone or as an accompaniment. Enjoy your meal!

    Made with white cabbage, less milk added, and nutmeg in the puree. Served with sausage and mustard sauce. Delicious. Next time I will also add a bit of mustard to the puree to enhance the flavor more.

    Warning, 500ml of milk is far too much for 1kg of potatoes.
