The consommé in cooking is a clarified broth. There are several recipes such as beef, chicken, or asparagus consommé. Here is my delicious recipe for chicken consommé.
In a large hot pot, sauté the chicken in oil.
In the meantime, wash and cut the vegetables into pieces to add to the chicken.
After 10 minutes of cooking, add the garlic, parsley, tomato paste, bay leaf, and cloves. Season and pour in enough water to cover all the ingredients. Let everything simmer over medium heat for 1.5 hours, stirring occasionally.
When the time is up, let your broth cool and strain it using a sieve.
To finish, place it in the refrigerator to keep it fresh for as long as possible.
