Chocolate, peanut butter, and ... pretzels. Together, they make deliciously addictive cookies.
Preheat the oven to 190°C.
In a mixing bowl, combine the flour, cocoa powder, and baking soda.
Using a stand mixer with a paddle attachment, mix together the softened butter, sugar, and brown sugar. When the mixture is smooth, add the eggs one at a time, then the vanilla, the flour-cocoa-baking soda mixture one tablespoon at a time, and finally half of the chocolate chips.
Line a baking sheet with parchment paper. Using a tablespoon, scoop some cookie dough and form a ball between the palms of your hands. Lightly flatten it and place half a teaspoon of peanut butter in the center. Enfold the dough around the peanut butter and reshape it into a ball. Flatten it on the baking sheet and top it with chocolate chips and pieces of pretzels.
Repeat the process until the dough is used up (you should aim for about 6 cookies per baking sheet. They will spread while baking, so make sure to space them out sufficiently).
Wait a few minutes before transferring the cookies to a rack and let them cool completely before enjoying.
To finish, you can freeze them. 40 seconds at 600 watts in the microwave and they will look like they just came out of the oven.
