To enhance the clementine, I chose to pair it with chocolate. Try it out, and you'll see why we can no longer do without this dessert at home!
Chop the chocolate into squares and start melting it in a double boiler. Meanwhile, bring the water and cream to a boil in the same pot.
When the liquid boils, pour it over the melted chocolate in three times and stir well. Add the vanilla sugar. Whisk the mixture until smooth if necessary.
Divide the mixture into 4 small cups or ramekins and place in the refrigerator for at least 2 hours.
To finish, just before serving, decorate the chocolate creams with a few segments of tangerine. Enjoy!
