Preparation of the chicken Cut the chicken into 8 pieces: 2 thighs, 2 drumsticks, 2 breasts, and 2 wings. Sauté the pieces in butter. Season with enough salt and pepper.
Preparing the filling Meanwhile, cut the onion into 4 pieces, the morels, and crush the unpeeled cloves of garlic. Add everything to the chicken, not forgetting the bouquet garni. Season with salt and pepper to taste. Make sure the pieces are slightly and evenly browned: for this, allow about 6 minutes on each side.
Preparation of the sauce In the pan containing the chicken pieces, deglaze the cooking juices with dry white wine. Reduce over low heat and then add the cream. Allow to cook for 25 to 30 minutes and remove the pieces. Strain the sauce through a fine sieve and add a splash of lemon. Check and adjust the seasoning.
In the serving dish, arrange the pieces of chicken topped with the previously prepared sauce. Serve the poultry with a cup of creole rice.
