 4 Chicken roll-ups
 25 Cherry beer
 1 Fresh green pepper
 1 40% liquid cream
 1 Lardons
 150 Baking margarine
 1 Thyme
 2 Shallot
 Cornstarch

Cooking Heat a little water in a skillet. When it boils, add the bacon for 1 minute and drain - to remove the salt and fat. Heat a pot with the cooking margarine. Brown the stuffed meat rolls and the bacon in it. Season with salt and add a small spoonful of thyme and the chopped shallots.

Adding the beer When the meat is browned and sticking, pour in the beer and scrape up the cooking juices from the bottom of the pot. Cover with water to the level and let cook for about half an hour.

Preparation of the sauce. Check the cooking of the meat. Add fresh cream and rinsed peppercorns. Raise the temperature to thicken the sauce a bit. Add a little cornstarch if necessary. Taste to adjust the seasoning.

Serve with sautéed potatoes and cold chunky applesauce.
