Preheat the oven to 180°C.
Slice the yellow onion. In a saucepan, heat the sugar and balsamic vinegar to obtain a caramel, stirring to combine. Remove from heat.
Pour the caramel into the bottom of a tart pan.
Place the tomatoes close together and add the sliced shallots on top of the tomatoes.
Add the cheese. Add pepper and salt.
Roll out the puff pastry on top and press the edges between the pan and the tomatoes.
Prick the surface of the dough with a fork. Bake for 30 minutes at 180°C.
Once cooked, remove the tart from the oven. Allow to cool, then carefully turn it out onto a rack or plate.
To finish, serve hot or warm.
