 1 Balsamic vinegar
 1 dash Balsamic Vinegar Cream
 1 dash Olive oil
 500 Cherry tomato
 1 Burrata
 10 Basil
 1 Fennel seeds
 Salt
 Pepper
 50 Powdered sugar
 1 Pine nut

Preheat the oven to 180°C.

Wash the cherry tomatoes and then cut them in half. Drizzle with a splash of olive oil, then season with salt and pepper.

Prepare a balsamic vinegar caramel: pour the sugar into a saucepan and heat without stirring until the sugar takes on a nice amber color. Add the balsamic vinegar and a twist of black pepper, then swirl the saucepan until a caramel forms. Mix it with cherry tomatoes and arrange them in a tart dish, cut side up. Sprinkle with fennel seeds and five rinsed and chopped basil leaves. Place the pastry over the tomatoes, tucking it slightly inward. Prick with a fork and bake for 30 minutes. Let it cool slightly, then invert the tart onto a serving platter.

To finish, add a creamy burrata and then drizzle with balsamic cream. Season with pepper and sprinkle with fresh basil leaves and pine nuts.
