Nothing beats a good homemade soup with fresh vegetables. Coconut milk adds a delicious creaminess that is very pleasant to the taste.

 5 Carrot
 20 coconut milk
 1 ground turmeric
 1 Ground coriander
 1 Shallot
 1 vegetable broth
 1 olive oil
 Salt
 Pepper

Peel and chop the shallot. Peel and cut the carrots into slices.

Heat the oil in a saucepan over medium heat and add the shallot, carrot slices, a pinch of salt, and pepper.

Stir with a wooden spoon for a few minutes. Add the powdered turmeric, pour in enough water to cover the vegetables and the broth cube. Cover and let cook on low heat for about twenty minutes.

To finish, pour in the coconut milk and cilantro, mix, and let it cook over low heat for a few minutes. Blend everything before serving hot.
