 200 Coconut milk
 Salt
 2 Vegetable broth cube

Preheat your oven to 200°C (fan setting 6/7).

Cut the butternut squash into cubes and place them on a baking sheet. Drizzle generously with olive oil, season with salt and pepper, and then bake for 30 minutes.

Once the butternuts are tender, add the curry and coconut milk. Season with salt and pepper and blend. Feel free to add water if the consistency seems too thick.
