Breaded eggplant slices flavored with lemon, a delight to accompany your main dish, your meat (excellent for pairing with fish) or to enjoy as a hot appetizer. This preparation is also ideal for getting children to eat vegetables.
Slice your eggplants into thin rounds, approximately 5 minutes wide.
Soak them in beaten eggs in a large bowl.
Coat the slices of eggplant dipped in egg with breadcrumbs on both sides.
Fry for 2 minutes in quality oil (use 2 to 3 tablespoons of oil).
Season with salt and pepper during cooking.
Place on absorbent paper.
To finish, pour lemon juice over the hot eggplants. It can serve as a main dish or a side with fish, for example, but should be eaten while it’s very hot!
