In a large bowl, mix the grated cheese, the soft cheese, the egg, and the parsley. Season with salt and pepper.
Place the mixture on one edge of a brick pastry sheet.
Fold the two edges (see photo).
Roll to form a cylindrical shape.
To finish, cook the pastries in a skillet with oil. Place on paper towels and serve immediately.
