It's not always easy to make a soufflé. We really enjoyed this recipe for a blue cheese soufflé.
Melt the butter, add the flour, and then add the milk in two increments. Season with salt and then pepper.
Preheat the oven to 180°C. Cut the cheese into small slices. Then add them to the béchamel sauce. Mix well to melt the cheese.
Separate the egg whites from the yolks. Whip the egg whites until stiff peaks form. Then add the yolks to the cheese béchamel mixture. Gently fold in the whipped egg whites with a spatula and mix delicately.
Grease a deep baking dish. Pour the mixture into the dish and spread it evenly on top.
To finish, bake for 45 to 50 minutes. A delight served with a green salad.
