Ingredients
 6 rice paper cut into quarters
 1 diced avocado
 1 Lime juice
 24 Mint
 2 Olive oil
 150 Beef in small cubes
 fresh ginger

In a large bowl, mix the diced avocado, diced beef, lime juice, olive oil, and finish by adding a bit of grated fresh ginger, salt, and freshly ground pepper.

Soak the rice paper for 30 seconds in cold water, drain, and then roll up the spring rolls, adding a mint leaf to each roll.

To finish, enjoy with a glass of the Reserve Cuvée!
