Peel the bananas, cut them in half, then cut each half in half again. Melt the butter in a pan. Add the powdered sugar, orange juice, and star anise. Bring to a boil. Add the banana pieces and let reduce. Turn the bananas over. Add the rum and flambé.
To finish, when the flames have gone out, remove the star anise. Place the crepes in front of you. Put half a banana on top and drizzle with the rum sauce. Fold into quarters. Place the other half of the banana, drizzle with the sauce, and sprinkle with shredded coconut. Serve hot.
