Preheat the oven to 180°C (350°F), static heat. Prepare 2 baking sheets with parchment paper.
In a mixing bowl, combine the flour, baking soda, cornstarch, and salt.
In another bowl, whisk together the melted and cooled butter with the sugar.
Add the mashed banana and vanilla extract and mix a little more to incorporate them.
Add the flour and mix with a spatula to achieve a smooth texture.
At the end, fold in the chocolate chips.
Using an ice cream scoop, place dough balls on the tray, spacing them out as the cookies will spread during baking.
Bake and cook for 15 minutes or until they are slightly golden.
Let cool for 5-10 minutes, then place them on a rack or serving platter.
To finish, store them in a closed metal tin.
