Baked stuffed pastry, this appetizer made with homemade dough filled with minced meat is a Tunisian specialty that everyone loves. These pastries are often served as a small starter to accompany soup during the Ramadan meal.

 120 Fine semolina
 120 Flour
 3 Oil
 3 Butter
 3 Salt
 100 Water
 1 Egg yolk
 250 Ground meat
 1 Onion
 15 Parsley

Start by preparing the dough by mixing the flour, salt, semolina, oil, melted butter, and water by hand or in a mixer bowl until the dough is smooth.

Divide the dough into 50g balls, place them on a floured flat surface, spacing them well apart, cover with plastic wrap, and let rest for 30 minutes.

Meanwhile, prepare the filling by cooking the ground meat in a pan with the onion for 10 minutes.

Add the spices, the parsley, and season.

When the dough is ready, roll it out into circles half a centimeter thick.

Place a spoonful of ground meat mixture in the center and fold the dough to form a half-circle, pressing the edges together. Then create a twist on the edges using your thumb and index finger.

Place the bricks on the baking tray and brush them with the egg yolk.

To finish, preheat the oven to 180°C and bake the pastry for 20 minutes until they are golden brown.

    Generally, they are called "boreks," which are either fried or baked. This is a specialty recipe from the Maghreb and not specifically Tunisian. I would say it has Ottoman origins.
